Don’t let those pumpkin squash go to waste this Autumn, we have a scrumptious recipe to make a sweet treat to bake at home.
Makes 12 Servings
Ingredients:
Cake:
300g light muscovado sugar
2 tsp bicarbonate of soda
350g self-raising flour
4tsp mixed spice
150g of sultanas
4 medium eggs, beaten
210g butter, melted
2tbsp orange juice
Zest of a whole orange
500g of grated pumpkin
Icing:
80g butter
200g of soft cheese
100g icing sugar (sifted)
1 orange zest and juice of half
Method:
Preheat the oven to 180 fan.
Mix flour, sugar, bicarbonate of soda, spice and sultanas in a bowl. In a separate bowl, combine eggs and melted butter. Next, add the juice and zest and stir. Mix the two bowls and then add in the grated pumpkin.
Place cupcake cases in a tin and evenly distribute mixture into the cases.
Bake for 17 minutes
While baking, create the frosting. With an electric whisk beat cheese, butter, icing sugar, orange zest and juice. Mix until light in colour and smooth.
Once cupcakes are cooked and cooled. Pipe the frosting onto the cupcakes and decorate.
