Happy Easter Cupcakes! Classic Iced Vanilla
Have some baking fun this Easter holiday with these sweet treat vanilla cupcakes to enjoy with family and friends.
Ingredients
For The Cupcakes
- 125g Unsalted Butter (softened) (*For a dairy-free alternative, use a sunflower spread or nut based butter).
- 125g Caster Sugar
- 2 Large Eggs, (beaten) (*For a dairy-free alternative, use 2 mashed bananas or 150ml sunflower oil)
- 125g Self Raising Flour , (sifted) (*For a gluten-free alternative, use a rye or oat flour).
- 2 Tbsp Milk (*For a dairy-free alternative, use a almond, coconut or soya milk).
- 1 Tsp Vanilla Extract
For The Butter Cream Icing
- 75g Unsalted Butter (softened) (*For a dairy-free alternative, use a sunflower spread or nut based butter).
- 2 Tbsp Milk (*For a dairy-free alternative, use a almond, coconut or soya milk).
- 1 Tsp Vanilla Extract
- 225g Sifted Icing Sugar
- Optional Food Colouring
- Optional Decorations
- Preheat the oven to 190°c.
- In a large bowl, beat the softened butter and sugar together until light and fluffy. Wisk in the beaten eggs, adding a little at a time. (If the mixture threatens to curdle add a spoonful of flour). Fold in the remaining flour. Add the vanilla extract and milk
- Put the cupcake cases on a baking tray and divide the mixture equally into the cases. Bake for 15-20 minutes.
- Now For The Butter-Cream Icing
- In a large bowl beat the butter until it is completely soft. Tip in the milk and vanilla extract. Add half the icing sugar and beat for several minutes.
- Add the remaining icing sugar and continue to beat until the mixture is light and fluffy. (If you want to add some food colouring to your icing, then we went for pink, yellow, blue and purple) Add a good dollop of icing and spread or pipe all over the cakes with whatever pattern you feel comfortable with.
